We cooked 165 eggs, grilled 50 steaks, and more at the Good Housekeeping Institute Kitchen Appliances and Technology Lab to review more than 35 new cookware brands. On gas and electric ranges, we evaluated how evenly skillets spread heat, how effectively they browned meat, and how well saucepans maintained a consistent boil and avoided scorching sauce.

We looked at how successfully nonstick surfaces released eggs and pancakes, as well as how simple they were to clean afterwards. Finally, we examined how simple each piece of cookware was to use, including if the handles got hot to the touch and whether each piece could be used in the oven and/or dishwasher.

Is nonstick cookware safe?

Traditional nonstick pans have a poor rep since many are produced with Teflon (also known as PTFE), which emits chemicals into the air at high temperatures that have been linked to cancer. Many nonstick pans today are produced without PTFE, but nonstick cookware is safe in any case, according to Robert L. Wolke, Ph.D., a chemistry professor emeritus at the University of Pittsburgh and author of What Einstein Told His Cook: Kitchen Science. As long as you use them properly and don’t overheat them, as explained. When is it too hot? At 500 degrees Fahrenheit, PTFE begins to breakdown, and at 660 degrees Fahrenheit, it begins to deteriorate severely, therefore use your nonstick pans on a medium or moderate burner.

Tips for using nonstick cookware

  • Never heat an empty pan since it will heat up considerably faster and reach 500oF much faster.
  • To cook with nonstick, use medium or low heat, but follow the manufacturer’s directions for the ideal temperature.
  • You won’t require as much oil as you would in a stainless steel pan since the pan will be coated.
  • Unless your instruction manual specifically states otherwise, avoid using metal utensils that might harm the nonstick coating.
  • Avoid placing nonstick cookware in the washes; the coating will wear faster.

The Anolon 82693 Advanced Hard Anodized Nonstick Cookware Pots and Pans Set has been upgraded since we evaluated it, with improved forms – our favourite is the little sauce pan with pour spout!

We continue to enjoy the feel of the handles in our hands and the ease with which the pots and pans can be moved about. We particularly like the huge sauteé pan with rounded corners, which has a lot of surface area for browning and functions well as a simmering pot. The set is Teflon-free and oven-safe up to 400 degrees Fahrenheit.

Ninja’s new cookware is the latest from the company that creates our favourite air fryer. Their pots and pans are tough enough to cook a steak yet light enough to carry about and use for simple chores like frying an egg or boiling water. They feature narrow lids and straight edges, which assist to optimise surface area. Their nonstick coating is placed at a high temperature to prevent chipping and scratching, and it is oven safe up to 500 degrees Fahrenheit. Unlike other cookware, Ninja’s lids may be used in the oven up to 500 degrees Fahrenheit.
